Can i use BTRFS format for the system disc and for the data disc or make it problems to use it in OMV?

OMV allows you to mount btrfs disks. So, yes you should be able to use it. I would test in a VM first. Pretty sure @subzero79 is still using it.

The current installer does not allow btrfs. You need to perform a offline conversion for the Os disk (ext4 only) or use a debootstrap.
You need to use the backport kernel also, I would say the default kernel is forbidden. At the current bpo only raid1 and raid10 support scrubbing. Raid56 would be asking for trouble.
You need a higher custom kernel for raid56 usage. -
think to use ZFS that actually have a good pluging instead of BTRS unless you really need to test/use BTRFS

Is fine using non raid. I use to have raid1 never had a problem. Then I downgraded to single disk. Btrfs is very flexible. You can convert raid levels on the fly. Raid1 to raid5 and back Then to single.
Raid1 is not as strict as mdadm, if you have 3x2tb disks the whole capacity is 3tb with mirror protection.
And of course there is no need of ecc. -

If i may input a question rather than start a new thread, im currently building a transcoding media server and was looking into BTRFS.
When using stripe for data and mirror for metadata, can data be recovered in case of a disk failure? or are only small errors correctable?regards

Raids are about redundancy to keep the system going on after a disk failure. They are not about data recovery, thats what backups are for.
The small errors you're referring I guess you mean scrubbing? Those are checksum error corrections, and they can be performed on live fs.
