1 - Yes. It has been stable since OMV 1.x. Did you try it? I have seen posts that Windows is barely working. Most people only post when they have problems. I have tested in a VM many times and had no issues.
2 - No.
3 - The plugin doesn't have any encryption options. You could use the LUKS plugin with zfs though.

So If I install the LUKS plugin and the ZFS plugin... which should I do?
(OPTION A)
1 - Create ZFS Raid Mirror with ZFS fileystem?
2 - Encrypt with LUKS? How?
(OPTION B)
1 - Create normal non ZFS RAID1 via webGUI
2 - LUKS encrypt the RAID1 vol via webGUI
3 - Open Luks encrypted volume via webGUI
4 - Apply ZFS file system for bitrot protection
5 - Apply some cron jobs to schedule ZFS snapshots (Not sure how)
6 - Apply some cron jobs to schedule zfs scrubs
(OPTION C)
1 - LUKS encrypt drives via webGUI
2 - Open LUKS drives via webGUI
3 - Use ZFS plugin to create a ZFS mirrored zfs pool
4 - Apply some cron jobs to schedule ZFS snapshots (Not sure how)
5 - Apply some cron jobs to schedule zfs scrubs
Not sure how option A is possible if I choose to make zfs type raid.
Also, are zfs snapshots possible as I've stated in b.5 ?
Also, what does the ZFS plugin default enable zfs compression?
You can manually create ZFS snapshots in the plugin. If you want to schedule via cron you would have to use the zfs cli command.
I have no real experience with ZFS, but:
Option C looks like your best bet to me.
Option B won't give you bitrot protection, as far as I can see, because the redundancy needs to be done in ZFS to achieve that.
Option A might be workable, but doesn't look ideal, as you would create a ZFS block device (or whatever the ZFS terminology is?), not a ZFS filesystem, on top of your ZFS RAID device, then LUKS on that, then a filesystem on top of that.
