select the desired "shared Folder " in webGUI and use button "Delete".
OMV Ask you if you want to delete only the reference to "shared Folder" or you want to delete files & data inside the shared folder.
PD: "Shared Folder" must be referenced=No to be able to delete it. (You can't delete a referenced shared folder).

You need to identify services that still use the reference shared folder, typically are (SMB, FTP, Transmision, etc..., and configure it to do not use), once OMV detect that your shared folder is not in use in none of the services that monitorice, you can safely delete it in webGUI.
PD: for your screen capture, one of services (menu of OMV) is "user" revise that do not use as homefolder or delete user.
The resetperms plugin has a tool to check which service is using which share.
your old shared folders is located on lost+found/ that is NOT a working folder is for disaster recovery.
if you want to delete, delete it from shell.
if you want to recover, copy folders inside to a working path from shell.
