Where (CLI, GUI) do you try to mount them and what error do you get?

It has recognised the drives on boot, and found the lvm volumes. However they are unmounted and I receive an error when I try an mount them. This makes sense as I haven't set anywhere to mount the directories.

You don't set a mount point in OpenMediaVault. They will get mounted to /media/UUIDofyourDriveorAray/. But post the error output, my crystal ball is unavailable at the moment.

Just convert ext2 to ext3 with (replace X3 with your drive and partition number):
tune2fs -j /dev/sdX3
