Plex Hardware Transcoding Docker

I'm just getting into OMV and collecting information on how to setup my home NAS with Plex and some other services. At this point I am willing to give OMV a try, but I just noticed that Plex on OMV may be a little tricky since there are several outdated ways to run it. Most common way seems to be using docker right now? My point is that I want to use hardware transcoding in Plex but as far as I know from the Plex website, it is not supportet while also using docker. So what are your recommendations?
