I had a RAID 5 setup with 3 drives, 1x2TB, 1x3TB and 1x4TB, I removed the 2TB so I could replace it with a larger drive, so I put in a 4TB drive and started a rebuild, but after it finished the storage capacity did not increase.
Did I mess this up or is there something I have to do to "unlock" the capacity?

You need to grow the array then grow the filesystem.

When I go to the grow array tab it doesn't give me any drives to grow with, I guess that's because the rebuild is done so the drive is occupied?

I don't know what the grow array tab is. Do you mean the Raid Management tab? If you don't see an array in that tab, something is wrong with your array.

I meant the grow button in the RAID Management tab, yes. When I click on the array and press grow, no disk is showing up in there.

If you manually (from the command line) added the drive and started the rebuild, you will have to manually grow the array.

I didn't add the drive through command line though, I just added it from the GUI, could you tell me how to grow it from command line then?

The add button grows the array I think. What size does the raid management tab say the array is?

Capacity is 3.52TB, same size it was with the 2TB drive

I don't know what your array name is but the following should grow the array:
mdadm --grow /dev/md0 --size=max -
