is a hdd with 10GB enough space for OMV 1 with wordpress roundcube and subsonic?
how many memory use

Yes. wordpress, roundcube, and subsonic store their data on a data drive not the system drive.

5 gb should be fine.

i have learned, with my config 5 GB isn't enough!
I use owncloud with the nginx plugin and when i copy a file over OC (webDav) it cache it in the root partition. -> I can't copy files over the free disk space

Interesting. None of my OMV boxes use more than 3gb. I guess you could symlink the webdav cache path to a data drive.

Nope. I don't use Owncloud. Look through the settings to see if there is a cache directory.

Does your installation of Owncloud use the nginx plugin?

Owncloud might be determining where to put temp files for webdav or it is using php's temp location.
