Depending on how your kernel is, you should be able to just move the SD card to the new RPi and run omv-firstaid. If you kernel is old, you might have to run rpi-update. Just a backup of your sd card before you do anything.

Can I just write a disc image of the old operating system on to the new MicroSD card assuming its the same size or larger and have everything just work?

Yes, as long as the kernel is new enough.
