Which path should I go? I want to utilize Plex in its most natural form. Free of any constraints, to utilize all the CPU and RAM I need to give it and access a large volume for content. Is the plugin good for this? Docker better? Thoughts? Experiences?

In my experience, it is the underlying system that you have OMV installed on that is the most important factor in how Plex will perform. So what are you using as your OMV server?
I have used Plex as a plugin and using docker on a raspberry pi - as an experiment / not for production - and both worked fine and I didn't really see much difference in performance.
Recently I have got quite into docker as it works well and there are so many containers you can use. So you will be able to add lots of supporting plugins using docker - to create a full media server for example. Also note that there are fewer plugin for OMV these days and part of the reason for this is because docker is so suitable and flexible for plugins.
So, on balance, I'd spend a bit of time getting to know docker and get plex working through this. You can always migrate to native plex plugin (including library etc) later.

easy to istall on a docker & better pluggin support (ombi, tautulli, etc...), so the correct way is using dockers.

The system is a XEON 2658 V3 12 Core CPU, 64GB RAM with a 21TB raid 6 volume across 8 drives.

That will be fine running docker! Just a bit better performance than my Raspberry pi lol
