I'm looking after installing PlexMediaServer plugin in OMV 5 but I can't find the plugin and the only option I can see is installing it in a docker. Is there any way to install Plex as a plugin like in OMV 4?

No, this was one of the plugins that was not ported to 5, look in the guides section for installing using docker.
