There are lots of ways to do it. Depends on how you are deploying. If you are using docker-compose, you can just do a docker-compose pull then docker-compose restart. If you are just using docker, stop the container, remove it, remove the image, pull the image, then start your container again.

I followed this video to install the controller
I tried recreating container and pulling the image but I get errors
update: I deleted container and image and fetched a new one ... it worked and my old settings were intact. Thanks

You can use the "recreate" button in Portainer - after you click it, there is an option to "pull latest image".
I wouldn't recommend ouroboros, watchtower, or portainer -> recreate (or any automatic updating) for the Unifi controller. Ubiquiti have had some pretty terrible "stable" releases, and are a perfect example of why a critical service should pinned to a specific version (not "latest") and updated in a controlled and deliberate manner (after appropriate backups have been made).
