The folder with the "by" is the mountpoint of your drive. This is where you want to put the docker base path etc.
The other folder w/o the "by" has been created because you used the wrong path in the docker-compose file and when installing docker.

That's an interesting find, and you were correct to use the 'absolute path'

Which is also different.
It should be
/srv/dev-disk-by-uuid-xxxxx
note the difference of "/" and "-"
Try to refresh the page with ctrl+shift+r
Both are unchanged (file systems and shared folders).
Might have found a way to log in remotely as root, will check this in some minutes and will let you know.
Then post the output of
lsblk
and
ls -al /srv
with lsblk :
and with ls -al /srv :
What you see with lsblk is the expected mountpoint. You should see exactly this in the filesystem view in OMV and also as part of the absolute path of the shared folders. I have no idea why it is different on your system, but I think you have to fix this first.
I would remove all shared folders and unmount the drive. Than mount the drive again and see if the mountpoint is correct in the GUI of OMV.
Then the same for the shared folders.
BTW: you can copy#paste text from the CLI. Use the </> button to create a code field.
In putty you just need to select the text. It is then already available in the clipboard.

Indeed, it is located on the boot drive (SD card).
I will try to unmount the drive then.
I can test this on my own system, I can add an external USB device in a powered USB dock

This shows that the directory "/srv/dev-disk-by-uuid-46037984-718f-4c9b-99f0-22ef007d3951" is an actual mount point. Check what is written in the "Mounted on" column.
root@omv5:/srv/dev-disk-by-uuid-46037984-718f-4c9b-99f0-22ef007d3951# cd /srv/abcde/
root@omv5:/srv/abcde# df .
Filesystem 1K-blocks Used Available Use% Mounted on
/dev/sde1 30896036 5531760 23775132 19% /
This shows that the directory "/srv/abcde" is not an actual mount point. The directory has "/" as mount point as stated in the "Mounted on" column.
I have unmounted the drive (but still not mounted), I have the following :
