How are people getting around the issue that Windows 10 removed support for SMB, I even tried to add it back under windows options but no luck.
Did MS remove samba? Windows 10 and smb1

What makes you think that is the case?

When I use a Windows 7 boxes it works. And Online it said that Windows 10 support for SMB was going away. I tried to go to windows options and click on SMB and SMB client, rebooted the windows 10 20H2 and still can't access the shares.

rbock58 Microsoft has removed SMB1 from Windows 10 due to it's insecurity, Windows 7 still uses it, without more information it's difficult to advise, but there is a guide here which should be of some help.
All my machines at home are W10 Pro 20H2 and I have no problems accessing any of my shares, both guest and user assigned

SMB per se hasn't gone away in Windows and isn't going to. It's SMB version 1 (notice your own link quoted above) that's deprecated due to security holes. Only SMB v2 and v3 should be used; if you enabled SMB v1 (SMB/CIFS) in Windows it's recommended that you disable it as it's neither needed for OMV nor useful.
