OMV does not mount filesystem automatically in general. Only with the usbbackup plugin.

There is no difference between installing "OMV from ISO" or "Debian from ISO and then OMV on top". You end up with the same system.

I wonder if, when installing Debian and then OMV on top of it, some kind of NTFS driver is skipped over, which would cause the filesystem on the portable drive not to be recognized at all.
It may be worth running apt install ntfs-3g from the command line just in case.

Yes, but you may not like it.
Reformat your NTFS drive to ext4 (or exFAT, if you need Windows compatibility).
