Debian 9 has less than a year left. And assuming OMV 4 doesn't have any security issues, I guess it would be safe.
wich end with HUGES waiting time on the webgui (afaik it's because the use of Salt in OMV 5)
salt is slow on super slow cpus but if you aren't changing your config all the time, it shouldn't matter

You're still assuming that no security flaws are found in the OMV 4 code.

I wouldn't. The most needed security updates (next to the kernel) are php security updates and they are not supported with ELTS (at least they weren't with Debian 8 ELTS). They aren't supporting the 3.16 kernel either.

I currently have OMV 4 installed and want to upgrade to OMV 5.
Now I'm wondering if this is a good idea or should I wait for OMV 6 to be stable?

If you want to upgrade from OMV4 to OMV6 you have to upgrade first from OMV4 to OMV5. This will also upgrade your Debian from 9 to 10.
Here is the upgrade procedure:
Upgrade Scripts for non-interactive major release upgrades (2->3, 3->4, 4->5)

I didn't know those scripts also update Debian.
Then I go to update to OMV5 and wait until OMV6 is stable and a script or patch is created to update.
