I've booted to knoppix, and can confirm the docker folder is empty on the OS drive at /var/lib/docker
However the OS drive at /docker has the expected containers.
There aren't any docker folders on any of the 4 data drives.
I've copied the /docker folder to one of the data drives. Is there anything else I need to make sure I grab? I've searched around and can't find anything /config

I was able to find in the /docker/volumes folder what I think you were referring to as the config folders. I rebuilt OMV, and it is running happily with all 4 drives, set up with SnapRAID, MergerFS, and I've got my Union File System set up, and SMB shares working.
I've tried changing my Docker storage location from /var/lib/docker to /srv/e5d2c.../docker with that /srv/ being my new Union File System and Docker won't start properly. Change it back and Docker and Portainer are happy.
How do I properly import these containers?
