If you are going to do a fresh installation, installing OMV6 can be a good decision. It works well enough already and you will avoid an update later.
When one day omv 6 will become stable, will my non-stable-version upgrade automatically to the stable version?
Yes. A normal upgrade will bring you the version that will be labeled "stable".
By the way, what are the restrictions regarding the functionality in the current non-stable?
Currently some plugins are missing for omv6 that are planned to be available. There is a thread in the plugins forum regarding the porting progress. And every now and then the code is being improved. But that is an constant effort.
