is there a way to clear a Log in the System Logs Tab in OMV 6 like it's in OMV 5?
Or do I've to do that manually on the CLI?

No

Why would you have to? Logrotate is used to rotate and eventually delete old logs.

No because most of the logs are nowadays extracted from the systemd journal which can not be cleared easily.
