Before using your solution in the organization, I decided to organize testing of the raid array for fault tolerance. I created an array, partitioned it, threw a couple of files and disconnected one of the disks. the raid array disappeared, the files were unavailable. This is a bad solution - a mirrored array (raid 1) should work with one disk out of two.

It does.
Read about MDADM failed disks.
You can't just plug it out.
You can test it by running commands to mount it degraded.
But the disk need to still be seen by MDADM
