You can enable the recycle bin on each shared folder if you use samba. I even think it's possible to set trash permissions so that only the administrator can delete files, although I'm not sure about this, I haven't used this feature in a while. I don't know if NFS has anything similar.
A step further is to make versioned backups, you can use the omv-rsnapshot plugin, or the omv-borgbackup plugin or a container with Duplicati, for example.
With rsync you could set up a sync with file deletion disabled, but if you do that you will have all the files mixed up and you will also have to clean up regularly to avoid filling up the storage.
Nextcloud also has a recycle bin in its internal configuration.
Another way would be to use btrfs as filesystem and use snapshots.

I'm not a huge fan of Trash; Yes, NextCloud has a versioning system, but this quickly messes up with active folders; my cloud is >100,000 files, and there is a hard limit by my provider for 250,000 files, which is almost reached, when doing e.g. a remote backup before updates.

That is true, but setting up an internet server is more complicated than setting up a local backup machine. One day I might host my own NextCloud 😉.

If you already have the OMV server it shouldn't be complicated. Here is a complete and widely tested guide in this Nextcloud forum with Swag.

Now I use Nextcloud AIO, in my opinion it is simpler than Nextcloud with Swag and maintenance is also simplified. But I used macom setup for a long time and it works fine, most of the people on the forum use that container. You can choose.

Maybe we are getting off-topic, But how could I reach such a NextCloud from outside? I have a good up- and downstream internet, but I would need a domain name. Or is it possible to address it with Tor?

In the macom guide it is very well explained, but in summary you need:
- A domain. Free on https://www.duckdns.org/ or buy one for €10/year.
- Direct the domain to your router.
- Open two ports on the router towards the server.
- Configure the container with a proxy that directs traffic to the container. Swag, Nginx Proxy Manager, or whatever.
you can access by duckdns name, only need to use duckdns docker and your own name from duckdns.
