I've installed OMV-extra + the Compose plugin for my newly installed OMV7 that I'm running on Debian.
The compose plugin installs with 1 error, then when I restart, it says ok. However, when I try to define the shared folder, do the compose and then apply these settings, I get this error

I think version 7 is not compatible with my system, so I'm reinstalling version 6.
While you didn't tell us what you system is, that is not true. It is hard to know what the problem is without the full error as BlueCoffee mentioned. Are you using a native Linux filesystem? ntfs or fat32 or exfat will not work.
That isn't all of the error. You will probably have to copy and paste it into a txt file and attach it to the post.

The plugin does very little different between OMV 6 and 7. Without more details on why it is failing, i can't tell you why it is failing.

I understand what you are trying to do and what is failing but unless I can see the entire output, I don't know what it is. Can you copy and paste the output into a file and attach from this command: sudo omv-salt deploy run compose
You don't have the docker repo enabled in omv-extras according to the output since it can't find the docker-ce package. If it is enabled, post the output of: sudo omv-aptclean repos
what does the command do?
The same thing that checking the docker checkbox is supposed to do. Something must have gone wrong. Running the command sets up the docker and omv-extras repos.
