put on your NAS and conect cable so it have internet access, the on OMV shel use omv-firstaid to select the apropiate NIC to use ( new NIC), and thats all.
PD; If you have dockers, you need aditional steps to recognize new NIC on the bridge networks, because point to old NIC (the NIC that exist when create the docker network) <- Not totally sure of this part, perhaps works and onlly affected networksa are macvlan network.

How do I access omv-firstaid - is this via terminal via ssh into the server?
I have 2 cables connected to the server - the old cable so server has internet and another to the new NIC

I need 2 cables connected as one is internet and the other is connected to the new 2.5 NIC so its recognised
sorry, but you can have connected at same time 2 NIC unless you area power user that know what you are doing.
You can have 2 or more NICs at same time on the machine, but only one active to normal use.
I know this is sort of late to the show, but, recently TP-Link products my be banned in the US soon if not already of this writing, due to security concerns. Not sure about a NIC but certainly routers/switches, or any other network connecting device.
I would hate to think my NAS would be hijacked.
