I'd like to create an rsync job that synchronises a subdirectory of a shared folder, rather than the whole shared folder. I don't think this is currently possible?

Can you create a shared folder that's a subdirectory of an existing shared folder?

rsync(1) — rsync — Debian bookworm — Debian Manpages
You can include/exclude with command line options, but I don't see any way to strip path components. So the subdirectory name at the source would end up at the destination too, which isn't what I hoped for.

Yes. When creating the new shared folder use the browsing button to navigate to the subdirectory.
