Hi I'm new here and love to get me hands dirty with OMV.
How do I change the colors scheme on theses fora? light gray text on a white background do not work well with my eyesight.

can do but this is normal mode or is this a problem with Fedora 40?

Dark mode looks like this:

Fedora wouldn't be the issue. Your browser and possibly plugins would be. I am using Firefox on Debian 12 with no issues. Your dark mode looks similar to mine.
