Please list the plugins you have installed. I assume one of them is the flashmemory. The errors look like this. There are messages about missing directories which are created once by the proftpd package during installation and then never disappear.

You can't.
You need first to take in consideration that OMV8 is still in a BETA stage and shouldn't be used for anything other than for testing.
And since you don't know how to sort issues as basic as reading an output and understand what to do to solve it, you better off, running OMV7 which is still the STABLE version (at least, until OMV8 is released)
As for the error itself:

I hope not. I don't use the ftp plugin. I don't know why the writecache plugin would delete the /var/log/proftpd directory on a running system. Even on improper shutdown, the writecache plugin is still just overlaying the existing filesystem.
Not sure what kind of hardware you have but it almost sounds like the system is crashing (not shutting down properly) and/or has failing media that the OS is installed on. The first thing I would do is disable the daily sync in the openmediavault-writecache plugin. If that fixes it, I would need a more logs to figure out why.
The deployment is failing because there are several directions missing in e.g. /var/log which are created once and then should stay forever.

What plugins are you using?
Runs for days, than files are deleted?
If you aren't running the writecache plugin with nightly syncs, I can't think of anything OMV related that would delete files. That would take me back to the failing OS media but you haven't told us what omv is installed on.
Your SD card could very easily be failing causing this.
