What did you find out? I am starting a big HA project now.
A quick search did not bring anything ....but I am pretty sure I read it....maybe it was in Homeassistant forum.... I will keep looking.
I am using Home assistant myself using RPi 4 so I remember noticing it for the case I would move HA to docker (using USB dongles was another point "against" HA in docker)
Regardless I will keep looking.

Your best way would be to create a Docker environment for your dev purposes.
You need to define your environment requirements (like Apache, Mysql, PHP, etc....), and then look for an adequate docker image to enable your dev environment.

But how do you login with your clients? Setting server address is obvious, but login email and master password is still required.
If I understand correctly your question, the answer is that user's emails / passwords definitions are done on your server using a BitwardenRS admin menu
Does the BitwardenRS-Server work with the payed features, like multiple user? As far as I cound figure out, even with self -hosting, a Bitwarden-Account is still needed and with more than one user, a little allowance to be due.
BitwardenRS "offers" shared entries

BitwardenRS is also my choice.
(I use HAPROXY for SSL and proxy front end for all my apps reachable from outside)
If you go for BitwardenRS, you may also consider:

It will do backups (you can configure frequency and number of revisions) of the BitwardenRS database

assuming you are using the image "containrrr/watchtower", they have a lot of configuration options including automated cleanup of superseded images.

your issue could be related to security design restriction imposed on sharedfolders.
Sharedfolders , probably used in your docker volume definition, are mounted (file system level) without execution permission.
If that your case, there is a way around it.
("The mntent entry could be changed in /etc/openmediavault/config.xml ")
So in the end, Docker appears to be an incredibly complicated and wasteful way to avoid having to install and configure services from the command-line. If that's true, then I certainly don't need or want it.
You should probably look again at Portainer....it is a very nice WEB GUI for Docker.
Regarding ressources, Dockers on OVM 4 or OVM 5 have exactly the same memory profiles needs.

FreeNAS is going after "business users" therefore they have upgraded a lot there hardware requirements
personally I would first create a separate user for all the "applications" and validate the permissions.
This image is working quite good, I used it with a VPN at the OS level

Clearly a permission issue:
Did you create the folders:
/srv/dev-disk-by-label-USB_DOCKER/Config/Transmission
/srv/dev-disk-by-label-Torrents/Torrents
before creating the container? (you should have)
and you don't need to specify the watch subfolder, the container should create it.
sidenote:
- you should create another user and not use admin
- beware of Adopi ....
