Just set it up with --net=host (or choosing host within Portainer). You also need to make sure that the GUID and UID is set properly and the user has permissions within the folders you also set up.

Have you set the media folders properly? If Plex does not find any folders, then no screen to set up media folders will come up.
You need to either specify the port or start it with network mode "HOST".
You also need to set this BEFORE creating the Container. You cannot change that.
Did you set up a manual IP address? It says Bad Gateway...
What is the output of docker ps -a and how did you install the plex docker?

Yes you could try to just reinstall docker completely.
OMV was always available via github... it is not only since 5.0.5... If you want to move completely i would rather wait for the final release.
Du kannst versuchen dein System mit omv-initsystem wieder auf Ursprungszustand herzustellen. Händisches rumpfuschen in der config.xml ist nunmal eines der schlechtesten Herangehensweisen überhaupt. V.a. Wenn man offensichtlich nicht weiß, was man tut...

Im übrigen fässt OMV die Daten nicht an. Sprich auch wenn du neu aufsetzt, sind die Daten natürlich noch da.

desktop PC <--------------> Switch (working at 1GbE)
Rockpro <--------------> Switch (working at 100Mbps)
So please unplug your desktop PC and plug in your Rockpro into that exact same cable. Check again if it just works at 100Mbps or at 1GbE.
