Maybe refreshing the file permissions with the ACL browser in 'Shared Folders' might help!?

You can delete them from /etc/openmediavault/config.xml. You can find shared folders under the xpath //system/shares/sharedfolder, mounted filesystems are located under //system/storage/fstab/mntent.
Please make a backup of the file before modifing it, otherwise you can corrupt the whole 'database' which makes OMV not working anymore. -
Filesystems are mounted to /media/<FSID>, e.g. /media/13ae961e-cf18-11e1-a4f8-0002b3a176b4. All content is below this directory.

You haveto use the CLI (command line interface). To do that login to your system via SSH or physically. Use the 'nano' editor to modify the files. Have a look here how to use nano:

Shared folders can't be deleted if they are used by services. You have to delete these shares before, e.g. in SMB/CIFS or FTP. You also can't delete a filesystem if it contains configured shared folders. This is a security issue to prevent the user from deleting something that is in usage, but in some cases, like yours, its a little bit bothersome.

Hast Du zufällig zusätzliche Repositories installiert, bsp. omv-plugins.org um zusätzliche Plugins zu installieren? Hast Du irgendetwas geändert das Dein System von einem von der Stange unterscheidet?

Wenn Du das System neu aufsetzen willst kannst Du auch gleich die neuen 0.3 ISO images nehmen (siehe Download Bereich). Aber ich schau mir das Problem nochmal an, also warte vielleicht noch ein bisschen.

As already told, your NTFS filesystems are the problem. I don't know how it comes, but the filesystem identifiers are unique what should NEVER happen. This is no problem from OMV, the FSID is used because you can assume that the FSID is worldwide unique. This is for Linux filesystems, i don't know if this also applies to NTFS, but NTFS is not officially supported by OMV, thus i can not guarantee it 100% works.
You MUST change the fsid for one of your NTFS filesystems to get it work with OMV. Maybe this helps:

Hmmm, sdb and sdc seem to have the equal filesystem identifier (FSID) which is normally unique. I don't know how this can happen, but to solve this problem these FSIDs must be different, otherwise OMV can not handle them correctly.

OK, do get the required informations you need to debug the WebGUI. You can use Firefox with Firebug or Chrome to get the necessary informations, i've attached a screenshot using Chrome.
Simply select the filesystem to unmount and press the unmount button. In the 'Network' tab in Chrome you'll see a entry called rpc.php. This contains the required informations (see red marked box in screenshot).

Hmmm, sadly this does not help. The given output does not match the error message. The field 'dir' exists for all three configuration objects, thus the error message can't be thrown based on this configuration data.

You see the user portal after have logged in using the user 'test'. Use 'admin' to reach the administration interface.

Melde Dich doch mal als root an der CLI an und führe folgenden Befehl aus.
Mir scheint als ob da ein Prozess hängt der die Dpkg/APT Datenbank gelockt hat. Es wird hier von OMV nichts magisches getan außer einen stink normalen Befehl auszuführen. Und wenn der nicht funktioniert dann wird eben die Fehlermeldung ausgegeben. Jetzt musst Du (wir) eben rausfinden warum das Kommando fehlschlägt.
