Actually you can make a single drive mergerfs pool. Then you wouldn't have to redo anything when expanding that pool. -

Deleting a file in the Files tab will not delete images.
Using prune is a great option. It won't delete any images in use.

Your OS drive is remounting RO due to errors/issues with it.
Either it is failing or there's a problem with its connector onboard.
You can try to remove it and re-seat it and see if it solves anything.
If not, you need to start considering a new OS drive.
