I've never tried it but just follow the normal installation routine. Create a thumb drive installer (how-to is on the homepage of OMV) and boot from it. Then you can see the windows for entering all the necessary informations.
I would suggest to back up your system drive in case something goes wrong or, just replace it with another unused one, which I would do.
There is no mention how to do a UEFI boot installation medium.
I use Linux already and don't have a problem to create a bootabel USB drive.
I read an older tutorial, but thye wanted you to use Jessie as stable OS and install OMV after the install, would that still work with Debian 9 (stable)?

No. OMV 3.x only works on Debian 8 Jessie. You should be able to install Jessie on efi though

Would "Debian-firmware-8.6.0-amd64-netinst.iso" be OK as install medium? And how would I install OMV 3.0.87?

I would use a newer release like 8.9 - look here - http://cdimage.debian.org/mirror/cdimage/archive/
ehm, how do I actually create a Jessie UEFI image? mto boot and then install it on a UEFI drive?
R.I.P. OMV you were an excelent NAS software but couldn't hold up with modern times booting terror from Micro$oft.
I was able to hack together an uefi iso by using Debian files, but my EMMC hasn't detected, still trying to fix that part though.

You will find bootable ISO files on debian.org as ryecoaaron said in his post. Use etcher.io to make a bootable USB-Stick, boot in plain UEFI (not legacy) mode and you're done I think there is no need for a dedicated UEFI omv ISO, keep coding on features and bugfixes, you awsome omv-guys
