I guess: no encryption dedicated plugin for ZoL. As I am a noob I also can only guess if the OMV ZFS plugin would work at all with it...

The plugin doesn't support it because it hasn't been released yet and isn't in the Debian repos. It isn't file-based encryption either. It encrypts the entire volume/disk like the luks plugin does.

File based encryption would probably be easier on the client instead of the server.
