I am restoring omv6 and I am going to restart the version upgrade after removing backports in v6 (and some other tidying up). Will report on outcome.
After re-applying the OMV7 upgrade, the end result is the same as previously, i.e. warnings on the apt update:-

which I guess I can ignore; and errors when attempting to do an omv-upgrade:-

These look more serious. Can anyone advise if the E messages are important?
