For syncing I use rsync and UrBackup for all my backup needs. Unfortunately it still can not backup the OMV system. Once that works I'll dump Clonezilla. But I use it to backup my NC data.

Wenn genügend SATA Anschlüsse auf dem Board sind, ist die SSD vorzuziehen. USB Sticks oder SD Karten sind ein Notbehelf imho.
Start a Linux live CD and try to connect to the network. Then you know if it's a soft or hardware issue.
I use a J4105 board. Power draw is 11W at idle with SSD, one DIMM and 3 slow running case fans. Each HD consumes additional 5Watts. I send them to sleep after 30mins.

Do you have the error messages from the beginning? Looks like a buggy firmware to me. However I do not know if that ACPI message has impct on your network reliability.
You might try ACPI=off temporarily as boot parameter and see what happens. Nevertheless disabling ACPI has disadvantages.
If not really necessary I'd avoid raid 5 and instead do daily backups. Striping a few drives if you need a bigger on is OK, then have a huge hd for backup purposes (rsync or there's an urbackup plugin).
Raid 1 or 5 I'd only use if high availability is needed (eg you run a Nextcloud instance for several people).

Are you able to boot anything else from USB? Maybe a Windows or Fedora or openSUSE. If that works I'd try the debian mailinglist or a debian forum.
If nothing else boots, I'd strip down the computer to the absolute minimum and retry. Other USB ports, disabling UEFI settings like secure boot or similar. Trying to boot from a CD, DVD is also a step you should consider.

OMV-Extras, Kernel tab, install Clonezilla (disc imager like Macrium Reflect) then start Clonezilla and backup what you need.

Vllt. hilft, das resetperms plugin zu installieren. In 'Freigegebene Ordner' gibt es dann einen neuen Tab 'Shared Folders in Use'. Hier werden auch zugreifende Plugins gelistet.
