The choice is entirely up to you. Both work Is there anything in the 4.17 change log that you need? If not, it may be better to stick on 4.16. If you just want the latest available kernel, then go for it.
Is ZFS supported in Kernel 4.13-4.15?

today I updated to latest kernel 4.18 and latest zfs 0.7.12 in debian backports:
WARNING: Do NOT ubgrade to Kernel 4.16 if you use ZFS
Everthing seems to work as expected for me.
