Didnt look into netatalk (honestly) so maybe my question is silly 
When adding or changing afp shares in omv it seems omv restarts the netatalkd. Pity if you have a timemachine or filecopy running, it drops all connections for all users. Maybe there is a more elegant way
I know no way to add / delete shares without restarting the service. If you have one, give me a hint and I will file a bug report.
It only drops the connection if you click the "apply" button. So you can make unlimited changes with your files/folders and apply them in the afternoon for example.
