i'm trying to use my banana pi as a NAS but i'm failing at the point of setting the ACL permissions, because the button is grey and not selectable...

What file system are you using on the volume for that share?
ntfs
The ACL only works on linux file systems, If you want to use ACL you must format the volume on linux file system like EXT3, EXT4 or XFS since you're using linux OS on OMV.
i'm using win7, but i cannot access the nas with the given username and pw
i only set up the permissions...
When you say you cannot access the nas I think you mean the nas share?
If you don't need to create access levels, when creating the share you can set on permissions "Everyone: read/write" and on the SMB/CIFS plugin the share option Public "Guest allowed".

Yes... I can see the bananas in my win7 network environment, but i cannot access the subfolders with the given username/pw... it alwas responds access denied, but i gave the folder permissions in the web-ui for my username/pw
access levels would be nice, because i'm sharing the bananas with my flatmates
I'm not the right person to teach how to create access levels on linux but I think if you read the posts below you can achieve your needs.

How did you created the subfolders? in windows?
Do you really need Ntfs? it would be much easier if you format as ext4 or xfs
