Using the Backup plugin, if I use dd I only copy the first disk, while if I use fsarchiver I copy everything OMV, including the data partitions.
It's right?

I guess it should say all system partitions. The plugin has never been meant to backup data drives.

They are just options. Use what works for you. dd only allows once backup. fsarchiver allows multiple backups.

Whenever you want. There is no right answer. If you use the scheduled backup, it will schedule it for a daily run.
