Your problem seems to be that you have not set up the NFS server shares in OMV.

If i modify the /etc/exports file from:
/export/path...
in
/media/diskid/path...I can see the files on openelec but is this a correct method? Sorry but I'm a rookie in OMV and NFS share, thanks for the support

Did you go to the NFS tab under services and enable it? Then create a share? You can do all of the configuration in the web interface and it is easier than the method you used.

For sure,it was correctly enabled and checked if it was correctly running with the "service nfs-kernel-server status" command. -
That will create all the proper nfs export configs. There should be no need to use the command line. The output of your mount command showed no export. So, something was not configured correctly.

I don't know why, these are the screenshots of my NFS configuration:

Strange. I would modify one slightly (or create a new one) and save/apply again. Maybe it is having issues with your manual modifications.

Try to run omv-mkconf fstab then mount -a
Check the exports are binded with mount | grep export
PD: don't use symlinks. If i am correct the symlinks wont help anything seeing the export in the client

So I tried to remove all the previous shared folders and to restart again, and now it seems working
Thanks to you and subzero79 for helping me, now I try to centralize the kodi database
