Now I noticed that the unmount button is greed out and wonder why it happened
Because it's referenced, that means you have created a share, until that is removed you cannot unmount it

Yes, you do the setup in reverse, delete the SMB share, then the actual share (so you delete the share, not share + contents) then the data will remain on the drive, then unmount.

cool so then I can say connect to to another machine and connect it back to NAS mount and it's still ok to do and not lose any data?

I would have to question why, the object of a 'NAS' is to set it up and use it, I have only ever had to do that once and that was a USB drive.

Provided when you delete the share in Shared Folders you select Share and not Share + Content from the Delete button.

I am not disagreeing with this concept - not to remove from NAS

Yes, but what you could do is to have a second drive connected and use rsync or rsnapshot to back up the first, or if you have another machine with drive space you can use the remount plugin to mount that machines share/s and rsync or rsnapshot to that.

What would be good way to connect it to OMV NAS
The remote mount plugin would allow you to mount a share hosted on Ubuntu in OMV, especially if the Ubuntu shares are SMB.

Well it's connected to ubuntu box now, disconnect it and connect to my new OMV NAS Raspberry Pi
