It depends on each container and what that container needs to do. Usually users are fine. But there are containers that need groups other than users.
If you want more security you can create a specific group for the docker user.

I wouldn't use this user for the docker, you have permissions to walk around the host as if you were at home.
The idea is that the user you use in Docker has the necessary permissions and nothing else. Just grant write permissions on the container volumes, that's enough.
Create a new user. Grant write permissions on the volumes on the stack and define that user on the stack.

And be careful when posting information. Delete sensitive information before, in that image your email is intuited, I would delete it.

Yes, you can do it all in the GUI. Just create a user. Then look at the stack volume, what folder it is in. Give that user write privileges on that shared folder. Ready.
