does dkms would reinstall modules correctly with a PVE kernel or could be a problem?

I would uninstall zfs-dkms if using the proxmox kernel.

Why dkms module are not installed automatically for new kernels?

That is what dkms is supposed to do. But when you are trying to install zfs on a kernel that has the module builtin, it fails. That is why I said uninstall zfs-dkms.
