How do I gain access to the files and folders on the rsync drive?
I wanted to know this in the event the main drive fails and I need to rebuild it from the rsync drive.

Where is your rsync drive?
Is it in the same server?
On a different server?
If the drive is in the same server you should find it in /srv/ if mounted after 3.0.68 (or so), or in /media/ if mounted before.
From Windows you can use Putty or WinSCP to access them. From Linux or Windows you can use FileZilla.
Or you create a share on the directory to access them via SMB/CIFS.
Its on the same server, I have 2ea I tb drives plugged into a Raspberrypi (vial a USB hub for power).
You are saying I can use Filezilla (very familiar with) to access by Rsync drive and then copy my files to a new main drive.
I should have thought of that, thank you and i will try this after the holidays.

Just tried it with Filezilla, works like a charm.

If you want to move files on the server, especially if they are large or if there are many of them, it is probably best to use midnight commander. It might remind you of Norton Commander
Install it with apt install mc
and then start with mc
When you use Filezilla on a client, all the files have to go thru the client. If you use mc all the operation is local on the server. Much faster.
