Actually I have 2 Hard disk raid 1 (2 x 3To).
If I install 2 others hard disk (2 x 6To), I will have the maximum capacity (2 x 3To + 2 x 6 To) or not (as 2 x 3To + 2 x 3To)?

Two ways to do this create a second raid 1 array from the 2x6Tb drives or use 1 for data (working drive) then have the second drive as a backup to the first using rsync.

TNo you won't, you'll get the size of the lowest capacity drive, that if you use linux RAID MD. If you use BTRFS multi device on raid1 you can have the overall divided by two. Don't get excited there is no fancy btrfs management in omv

Buy more hard drives of course. I think mergerfs is a good option there is no data integrity but as long as you keep backups should be ok.
If you want data integrity then use zfs have two raid1 vdevs and join them in a pool

buy 2 harddisk (2 x 3To): HD1 and HD2
save my raid 1 on HD1
with HD2 and the raid 1 create raid 5
save HD1 on raid 5
finally add HD1 on raid 5 --> system raid 5 with 4 harddisks and 9 To of capacity -
