Just curious... can I make these tweaks to a pre-existing array with data on it? I will back up the data if I need to but I'd rather not have to.

You can change the stripe cache size with data and while mounted. I have many times.

Never used (or needed) it. He says it may cause data loss though. -
I used the blackdev tuning trick. It works makes the software raid faster. I am getting 270 megs per second.

Strip_size_cache default setting 256 causes slower read/write on drives.

so you do not need to change it to 8192 manually.

Yes. OR your RAID is md127 instead of md0 (for example). So it does not have to be md0
