Unfortunately even linuxserver has stopped updating openvpn in favor of wireguard, you can see it here.

If you do a search for openvpn containers most of them are no longer updated. Maybe you will find one that still works.

When you install the same version with changes in a short timeframe, your will need to clear the salt cache:
sudo /usr/bin/salt-call --local saltutil.clear_cache
sudo omv-salt stage run prepare
I recommend hitting ctrl-shift-R after every new install too.

That usually happens when the remote share is not mounted. I would delete the remote mount and try again.

Can you please test reboots? I'm not having any problems with my test system that has nfs and cifs mounts.
Reboots are not working through omv itself, only through ssh (putty) and a power shutdown
