Can I make use of the second in any way to speed things up?

you can use it as a link agregation, but is only a bit noticeable for small bussines with concurrent trafic from clients, on home use in not noticeable, search about LACP or link agregation or bonding.

Yes. And it won't speed single copies up. It just will allow multiple parallel copies at higher speed.

Yes, this will work but you are not going to get full advantage of "bonding/trunking". "Round robin" option has some limitations. Most benefits of "bonding" (trunking) is to use "802.3ad" LACP (Link aggregation Control Protocol). For this you will need managed network switch, suchas Netgear GS308T or equivalent, supporting LACP. In either case you will not get greater speed, but more "bandwidth". Instead of single lane road yo will have 2 line highway witch permits more traffic (packets) at the same time. Below is screenshot of what I have configured.
