I have a media server and it is Debian 12 Xfce...but want to reinstall with Plex and OMV is my first choice....

Ok....fair question - no I haven't ....even at 67 I still run my computer business here in Sweden....my first priority is my customers.....and then when I have time over....not often.... my partner sees to that....we are just starting to get a feeling of spring here in Sundsvall (around the middle of Sweden by the coast) - but still a lot of snow and April can be a funny month, so I will soon be focusing my energy to our summer cottage and all the work that entails I have several computers running OMV - but have never got around to docker...I was visiting family in England over Christmas and my daughter´s boyfriend uses Plex and recommended it ....so I thought I'd give it a go.....
I used to use my media centre for looking at films and listening to our library of music....but....most of the modern tv's have different services built in and Chromecast is one of them....so having a desktop environment like Xfce isn't really necessary any more....

Why docker? I'm running Plex on my omv-system without. Installed according to this guide:
The apt-tool in omv is handling the plexmediaserver updates.
No issues at all - plex is just running beside omv and is using the shares/mergerfs created w omv.

this has nothing to do with the motherboard. The plexmediaserver is available for nearly each platform and linux.
What I will try next time when I have to reinstall plexmediaserver on my omv-system is: use apt-tool in omv to find and install the package.
In general, it is preferable to use docker to install applications for many reasons. The following come to mind:
- You avoid interference of the application with the OMV operating system.
- Docker allows you to isolate the application from the host environment. This provides security. Especially thinking about an application like Plex that will possibly be exposed to the internet.
- Docker allows you to store persistent container data on a hard drive independent of the operating system. This ensures that a reinstall of OMV will not affect the container. Once OMV is reinstalled you just have to lift the container again and it will be working the same as before in two minutes.
- Others...
Obviously there are packages that you can install together with OMV and they will work, others will not. Personally I will always choose a container if it exists.
Regarding Plex, I personally like Jellyfin better for several reasons, but these are personal tastes.

In looking at my media centre...I have room to add more drives and I have some ssd drives ...so it would be nice to install docker on one of them....and as you point out that would be separate from the installation drive.....nice idea!

The above computer was a main work server for years and then a customer didn't want to repair a computer and dumped it on me which is far newer than the one above...bought the above motherboard in 2011....God time flies....

If you don't look at the consumption it should work without problems.

You're definitely right, I'm pretty sure!
BUT: especially for plexmediaserver docker isn't really "needed". To be honest: when setting up omv as NAS I just was reading about "plex in docker" and haven't understood anything (I'm just kind of "beginner" in linux). So I just tried setting up plex in parallel, found out its working - and voila: never touch a running system

This tutorial, despite its date, is based on the version prior to March of last year of omv-extras. Furthermore, it is installing the container in Portainer and also does not use a stack, it installs Plex by configuring all the parameters one by one in docker. In my opinion that tutorial should have been in the trash a long time ago
If you spend some time this weekend reading this document you will learn how to use docker with the compose plugin. After that you can install any container. https://wiki.omv-extras.org/doku.php?id=omv7:docker_in_omv
The example in that document is based on Jellyfin, but it is only an example to learn how to configure a container. Once learned, choose a Plex (or any other) container like this and deploy it. https://docs.linuxserver.io/images/docker-plex/

You just have to adapt that file to your needs, as explained in the previous document. It is much simpler than it may seem at first.

I have now had the time to install OMV 7 ....
I have an extra drive as recommended for docker....
I created a file system on the new drive and called it Docker.....and mounted it...
I have created two shares and they are docker and data....
In compose > settings I have added Docker to Compose shared file and Data to Data shared file...
I have then linked Docker Storage to my drive... (absolute path)
Further than that I haven't come....
What is the next stage?
