Just trying to Backup 800gig over USB3 with the USB-Plugin ... it is terribly slow. 400gig in 24h, only half the job is done. What can i do to determine the bottleneck?

Do you have the backports 3.16 kernel installed?
Can't remember ... I think so. ->

Which type of hard drive are you using? Is it an SMR type?
I don't knoe what this means or how to determine it.
But I found this in the log (many!):
Jun 26 07:46:08 omv mount.davfs: open files exceed max cache size by 3539 MiBytes ... I use the flash memory plugin, maybe this is odd?

Some new Seagate hard drives (typically 8TB capacity) are built with a technology called SMR. They are much slower than normal hard drives with write speeds similar to the speeds you have reported.
If your hard drive is less than 8TB don’t worry about this as teh problem will be something else.
And the fs of the usb disk? Ntfs?
The data partition is a raid ext 4 and the backup partition is usb 3 / ext 4
This might sound stupid but I have to ask, is the USB port 3.0(blue color)
also do check that OS is detecting the usb 3 hub with lsusb
