It should do that by default each time you install a new kernel. the 6.1 kernel is the latest for Debian.
Ive done the updates and rebooted and worked fine but cant understand why the smart is doing what it is doing

It is just testing the disk to try to find any early signs of failure.
So sud I make sure I have a static ip for the server? I think u mentioned this at the start or wat I gather is that this wasnt the problem right
static ip wouldn't have helped your issue since it wasn't booting. You just had a corrupted write and it happened to be in the initramfs. hard to say why.

I forgot to ask - So now I have it running well how wud I do a backup of the OMV OS or backup whats needed so that if I run into a similar problem or worse I have a stored backup of the bits that Id need to get up and running again once I had installed a new OS disk in the server?

Thanks for that - So in any terminal window and logged into OMV user to do it or actually plugged into the server running OMV as I have for the above problem
Also can I then save this to my Gdrive so its in more than one place? If so is there a simple way to do this?
