I have two NAS servers on which Omv is installed. I have Omv 4 and Omv 7 and would like to transfer the existing RAID (3 disks) from the 4 to the NAS with Omv 7. Can I unplug the disks and plug them into the other installation in the correct order so that it is recognised correctly? This should only be temporary, as the computer with Omv 4 is stronger and I want to make a new installation on the computer.

Yes. The order does not matter. OMV7 should recognize the RAID during booting.
You will have to do the configuration from scratch, i.e. mount the filesystem, create shared folders pointing at the existing folders on the RAID etc.
